Organic BTR Apricot Kernels by Blue Mountain Organics have a nutty, bitter-sweet flavor and a pleasing crunch, adding incredible taste variety and immune system support to any snack or meal! Apricot kernels contain a relatively high protein content compared to other seeds and nuts, and they are significantly rich in the key nutrient amygdalin. Also known as vitamin B17, this vitamin works to halt abnormal cell growth, and may play a role in helping the body reverse deep-seated sources of illness. Apricot Kernels are closely related to Almonds and they have a similar Almond-like flavor, but with a sweetness and texture all their own. The distinctive, bitter-sweet flavor and satisfying crunchy texture of these Apricot Kernels is revealed during the careful method of processing which makes them Better Than Roasted. These BTR Apricot Kernels taste sweeter and less dense than conventionally roasted nuts. The BTR process begins with raw, whole, certified organic nuts and seeds which are repeatedly hand-sorted through all four steps of the production process. Soaking nuts initiates germination and removes naturally occurring, bitter-tasting phytates, which have been shown to inhibit digestion as well as the absorption of some nutrients. The dedication to this soaking and rinsing process actually helps to enhance the absorption of the vitamins and minerals present in the finished BTR nut.

The nuts are then dried at 108 degrees Fahrenheit or below, which protects vital enzymes and nutrients, and maintains the raw, live nature of these nuts and seeds. Foods high in live enzymes require less of our own digestive enzymes, helping us to conserve enzyme energy and increase bio-availability of nutrients.
