How To Use Lucuma PowderLucuma may be added to all kinds of beverages, smoothies, and desserts. Like Maca and Tocotrienols, Lucuma helps to draw together (and emulsify) fats and oils with sugars and polysaccharides. For example, Lucuma is great to add to a recipe or beverage containing cacao nibs (50% fat and oil) and yacon root syrup (sugars and polysaccharides). It will draw the cacao and yacon together in flavor and texture. Another example, Lucuma is great to add to warm Pau D'Arco or Cat's Claw tea with a slice of Cacao Butter (oil) and a teaspoon of Manuka Honey (sugar and polysaccharides). Blend on high and enjoy an exotic superfood treat!
Traditionally, Lucuma has been most often enjoyed in an ice cream. Here is a new version of Lucuma-flavored ice cream, using raw, vegan superfoods to improve upon a classic recipe:
Maca Vanilla Ice Cream
- 1½ cups cool processed raw cashews
- ½ cup coconut cream, coconut meat, or raw coconut butter
- ½ cup Organic Lucuma Powder
- ½ cup raw honey
- ½ Tbsp raw vanilla powder, or the scraped insides of 2 vanilla beans
- 1½ Tbsp psyllium hulls (essential for creating a soft ice cream that can be scooped)
- ½ cup spring water, or more to allow blending consistency. You may also use cashew milk made with cool processed raw cashews.
- 1-6 Tbsp Maca Extreme. If you don't have Maca Extreme in your kitchen, you can also use ¼ — 1/3; cup Maca Powder or Red Maca Powder
- salt to taste. It is preferrable to use a highly mineralized salt, such as Celtic Sea Salt or Himalayan Crystal Salt.
Mix the above ingredients into a smooth consistency, pour the mixture into a bowl, and place in the freezer until set. This recipe serves 6.
Once you taste this exotic, raw ice cream, you may be temped to invent new flavors using organic Lucuma Powder. While maca is a clear first choice, raw cacao works even better! Try adding a chocolate sauce to the above recipe, made using raw cacao powder and cacao butter. Even better, cacao nibs add just the right amount of crunch to complement smooth, luscious ice cream.
