This olive oil is made from ripe olives crushed and ground with stone presses using the original techniques developed by the Greeks and Romans thousands of years ago. This oil is true to the original varieties available in the ancient Mediterranean. Are All Olive Oils Created Equally? Your first taste of this oil will tell that you may be experiencing something unique in olive oils. This extra virgin variety is completely cold pressed from ripe olives that are hand picked and milled within 48 hours of harvesting by a stone wheel. The olives are then put through a hydraulic press, collected in vats and then bottled. This method is quite like those developed by the Greeks and Romans thousands of years ago.
Will your current olive oil pass the palm taste test? Simply pour a few drops of your favorite oil into the palm of your hand and lick it off your palm with your tongue. Is a greasy film left on the palm of your hand? The greasy residue is a sign that heating of the oil actually occurred during the extraction process or that the oil is not purely made from olives.
