Tempering is an exact process of maintaining precise temperatures during preparation to ensure the cacao butter in the paste correctly crystalizes as it cools, preventing chalky, crumbly or grayish cacao paste. The final tempered cocoa bits are perfect for creating a variety of raw chocolate treats. This form of cacao can be easily blended into chocolate candies, smoothies and desserts while still giving you all the healthy benefits of the powerful superfood known as the “Food of the Gods.”
The maximum temperature reached during the process is 103 F, and it fluctuates between 75-103 F.

At Sunfood, we often use cacao paste to make our own raw chocolates. It's easier than you can imagine! Melt equal amounts of cacao paste and cacao butter, add a raw sweetener, vanilla powder, and a dash of Kalahari Salt. Put in a mold (or ice cube tray) and set in freezer to set.
