Sustainably Grown Ripe Moroccan Olives
Grown and harvested in an untainted central valley of California, our Moroccan Olives are pure, naturally cured and delicious. A nutritious food that's technically a fruit, they are one of nature's most delightful sources of the antioxidant vitamin E. They also have vitamin A, calcium and iron, as well as oleic acid, a heart-healthy monounsaturated fat. These flavorful olives have a taste to match their nutritional benefits, adding a savory boost to salads and cuisine of all types.

Did you know that most olives are picked long before they are truly ripe and can even be softened with chemicals such as lye? Some olives are artificially darkened with an iron compound called ferrous gluconate, and all canned olives are pasteurized (cooked). They are packed in pure water with fresh garlic, oregano, cayenne pepper and sea salt to provide an extraordinary olive experience.

Suggested Use

Add Moroccan Olives to your favorite recipes or eat straight out of the jar. No salad is complete without olives. Pit them, chop them up and sprinkle them on your greens - delicious! At Sunfood we like to use olives as the "meat" of many dishes. The texture of olives is very satisfying and great for helping to get that "full" feeling.These olives combine well with any raw nut for a delicious party mix. After eating the olives, the lightly salted brine may be used as part of a delicious salad dressing. 

For a real raw olive treat, use the brine from a jar of Moroccan Olives to any of our recipes for nut pates or spreads in place of water. Add Botija Olive Oil or Sacha Inchi Oil to this combination for a delectable, savory spread with a hint of garlic and a touch of heat from the cayenne. You can also try pouring the brine from a jar of Moroccan Olives into a jar of Peruvian Olives. The sun-dried Peruvian Olives will soak up the flavors of the Moroccan Olives, making a totally new batch of raw, spicy olives!

I love these olives, but it goes beyond that. After the olives are gone I add a ton of fresh garlic and oregano and sometimes hot pepper to the brine. After it ages, at least a week, I use the crunchy brine on avocados. Yum, yum!!! (Posted on 6/22/14)
