These green olives are packed in pure water, a dash of fresh garlic, a dash of fresh oregano, one ripe chili pepper, and a dash of celtic sea salt. Manzanilla olives take an incredibly long time to cure, sometimes remaining in the brine for up to 18 months before being placed in the jar. This intensive curing process allows the beneficial lactic acid bacteria enough time to properly cure the olive and develop just the right flavor, and we think the wait is totally worth it!
Olives are naturally high in beautifying oleic acid, and are also one of nature's richest sources of the antioxidant Vitamin E. Olives are champion mucus dissolvers, easily beating out figs and oranges. This makes them not only a delicious snack, but also an excellent food for internal cleansing. After eating the olives, the lightly salted brine may be used as part of a delicious salad dressing. For a real raw olive treat, use the brine from a jar of Kalamata Olives to any of our recipes for nut pates or spreads in place of water.
