Description
Lecithin is a great source of the nutrient choline, which is vital for brain function and development, breaks up cholesterol in the body and supports liver health. Previously the suggested sources for choline were foods such as egg yolk and fatty meats. Soy lecithin was also recommended but most is produced from genetically modified soy and can be difficult to digest. But we are happy to announce a new, raw, vegan, non-GMO, Sunflower Lecithin.
Aside from its nutritional benefits, lecithin is also a natural emulsifier (thickener), which chocolatiers will tell you is an essential ingredient for fine cacao creations. Simply add this dark syrup to your next cacao project and it can help stabilize and harden the mixture to give it that classic chocolate bar snap and feel.
Sunflower Lecithin is 100% raw, gluten-free, kosher, and cold pressed. There are absolutely no heat or solvents used during extraction.
