And that still wouldn’t be enough. Tacos made with gluten-free, carb-free, sugar-free coconut wraps take this easy and perfect street food to a whole new level – tacos sans guilt!
You can use whatever ingredients you most love or have on hand in your fridge. If you have vegetables and herbs growing in your garden, even better. Nothing tastes more delicious than freshly picked veggies from your own garden. Tahini and lemon give this taco a savory finish while corn and avocado bring out the summer flavors. Add pea shoots for extra crunch and vitamins, and you’ve got yourself a delightful and healthy lunch!

Avocado & Corn Vegan Taco + Tahini Lemon DressingPrint Recipe
- Sunfood Coconut Wraps
- ½ avocado
- ½ can unsalted corn
- ¼ cup bean sprouts
- 1 tomato
- 2 tbsp olive oil
- 1 tsp tahini paste
- Salt and pepper to taste
- Juice of half a lemon
Dice your tomato and avocado and combine with bean sprouts, corn, 1 tsp lemon juice, salt, pepper and 1 tbsp of olive oil
In a mixing bowl add your tahini paste, remainder of olive oil, salt, pepper, and lemon juice and mix until smooth.
Form your taco by taking one of the Sunfood coconut wraps and filling as much or as little of your avocado corn mixture inside.
Top off with your tahini dressing and you have a great refreshing lunch idea that’s a hit.
