Avocado Corn Taco With Lemon Tahini Dressing

Summer is coming and so are all the foods we love to enjoy during the dog days of pure bliss. Tacos are very high on our list. In fact, we could eat them all day every day. And that still wouldn’t be enough. Tacos made with gluten-free, carb-free, sugar-free coconut wraps take this easy and perfect street food to a whole new level – tacos sans guilt!

You can use whatever ingredients you most love or have on hand in your fridge. If you have vegetables and herbs growing in your garden, even better. Nothing tastes more delicious than freshly picked veggies from your own garden. Tahini and lemon give this taco a savory finish while corn and avocado bring out the summer flavors. Add pea shoots for extra crunch and vitamins, and you’ve got yourself a delightful and healthy lunch!
