Pumpkin Seed Spread

Milk Thistle is a powerful rejuvenator for your liver. It has a delicious, nutty essence that will make your pates and spreads even tastier than you thought possible! Try it wrapped in nori or collard greens!


2 cups pumpkin seeds, soaked for two hours
1/2 cup celery
1/2 cup carrots
1/4 cup Botija olive oil
1/2 tsp Kalahari Salt
1/4 tsp kelp powder
1/2 cup water
1 lemon, squeezed
1 tsp fresh ginger
1 clove fresh garlic
dash of ground black pepper
2 Tbsp ground milk thistle seed 

Grind milk thistle seeds in coffee grinder or Vita Mix Blender. In food processor, add all ingredients and process thoroughly. You might need to add more water or oil to make it creamier. Adjust flavors to your preferences. You can then add to nori rolls, on top of salads, or dehydrate for a delicious herbal cracker!
