If you’re ready to go beyond green smoothies to get your greens, then look no further than this creamy, savory pesto sauce. It’s a simple, creative way to get your greens using our Sun Is Shining. Truth be told, you can’t even tell it’s in there! Serve it up with our kelp noodles and you’ve got dinner in 10 minutes!
1 cup Cashews
1 bunch basil
1-2 garlic cloves
2 Tbsp nutritional yeast
1 Tbsp olive oil
1 Tbsp Sun Is Shining Supergreens
1/2 tsp Pink Himalayan Salt
3/4 cup water
1 package Gold Mine Kelp Noodles
1/2 cup sun dried tomatoes, soaked for 20 minutes (optional for garnish)
Rinse and drain the kelp noodles and set aside.
Blend cashews, basil, garlic, nutritional yeast, olive oil, Sun Is Shining and salt, and water in a high speed blender until you get a creamy consistency. Add more water if needed.
Mix the pesto with the noodles and allow to sit for 10 minutes to soften.
Garnish with chopped sun dried tomatoes. Enjoy!
