Simple Spring Salad

(Makes two servings)

This salad is the perfect addition to any summer day. Simple to prepare, delicious to eat and loaded with nutrients, you can enjoy it at a picnic or at your dining room table.

Ingredients:

  • 5 oz. mixed organic greens such as romaine, arugula, watercress and dandelion
  • 1 tomato diced
  • ½ cup pitted kalamata olives
  • 1 avocado
  • ¼ cup sunflower seed

 

Preparation:

Add greens to large bowl. Add tomato, olives and avocado, and toss well. Garnish with sprouted sunflower seeds and serve. You can also try sprinkling on a few plump raisins for a sweet addition. Or try giving your salad a superfood boost with sea vegetable flakes, salad booster

Dressings:

Try pouring on Aaron’s Wild Jungle Creamy Dressing or for something lighter simply add a teaspoon of olive oil, a dash of lemon juice and a pinch of sea salt.
