This vinaigrette recipe is an ode to pomegranate. It’s a fall/winter fruit that is as colorful as the season’s changing colors and adds a crunchy texture and juicy punch to any dish. Combined with Dijon mustard and orange juice, it’s perfect for hearty salads or drizzled over roasted vegetables.

Pomegranate & Orange VinaigrettePrint Recipe
- 1/4 cup coconut vinegar
- 1/2 tsp Dijon mustard
- 1 Tbsp orange juice
- 1 Tbsp pomegranate juice
- 2 Tbsp finely chopped parsley
- 3/4 cup olive oil
- 2 garlic cloves finely chopped
- 1 Tbsp maple syrup
- 1 tsp orange zest
- Pinch of Turmeric Powder
- Salt & pepper to taste
Combine all the vinaigrette ingredients and mix well.
