Chai Almond Milk

Almond Milk

This is a great holiday recipe. Perfect for those times when you want something creamy, sweet, and a little spicy too. It is delicious when served gently warmed and a wonderful way to enjoy chai without turning to soy-based pre-made chai mixes!

Ingredients:

1 cup soaked almonds
16 oz pure water
1 tsp coriander (freshly ground)
1 Tbsp fresh ginger, peeled
1 tsp vanilla powder
¼ tsp nutmeg (freshly ground)
1 tsp cardamom (freshly ground)
¼ tsp clove (freshly ground)
¼ tsp black pepper (freshly ground)
1 tsp cinnamon (freshly ground)
¼ cup Coconut Palm Sugar (or sweetener of choice)
Pinch of Kalahari or Himalayan Salt

Instructions:

Soak almonds in a bowl or cup overnight for at least 8 hours. Rinse almonds well, pour out soaking water and place almonds in blender with rest of ingredients. Pour 8 of your 16 oz of pure water into the blender and add sweetener. Blend on high for 30 seconds. Add remaining 8 oz of pure water and blend for another 30 seconds. Over a large bowl, pour contents of blender into nut milk bag and milk/massage material so that the bowl fills up with your freshly made and strained raw chai. Heat gently for a warm chai, or add ice for a chilled variation. Yum!
