Coconut Persimmon Pudding Recipe

This recipe is fun and easy to make. Great for kids and adults, it tricks everyone into thinking it's an indulgence, while providing wonderful raw, healthy foods. In just a few simple steps you can prepare something yummy to eat and spectacularly good for you.

Step 1: Caramelized Fruit

4 Persimmons (or your favorite fruit)

Yacon Syrup or Agave Nectar (enough to coat the fruit)

First, prepare the caramelized fruits. Cut 4 persimmons (or your favorite fruit) into small squares, mix them with yacon syrup and dehydrate for 50 minutes at 115 F, or place them under the sun for 3 hours (If there are bugs around you may want to cover the fruits). They should be ready by the time you finish with the next two preparations.

Step 2: Cacao Fudge

1/4 Cup Raw Organic Coconut Oil 1/4 Cup Cold Pressed Organic Olive Oil 1/3 Cup Raw Agave Nectar 1.5 Cups Raw Cacao Powder Pinch of Sea Salt

For the cacao fudge just melt 1/4 cup of raw organic coconut oil by placing it on the dehydrator or under the sun and mix it with 1/4 cup of first cold pressed organic olive oil, 1/3 cup of raw agave nectar, a pinch of Celtic sea salt and 1.5 cup of raw cacao powder. Mix the ingredients until you get a homogenous fudge (some raw cacao powders have different moisture content so if your fudge looks too thick just add in a little bit more olive oil, if it is too soft just add in more cacao powder).

Step 3: Coconut Pudding

2 Fresh Coconuts 1/2 tsp Vanilla Powder 1/2 Cup Raw Agave Nectar 2 Tablespoons Raw Organic Coconut Oil

The coconut pudding may take a little more work if you don't know how to crack a young Thai coconut, but you can find plenty of videos online or just grab a big knife and hit it until it opens... Just be careful! Blend two fresh coconuts (the "meat" of both coconuts and 1/2 of their water all together), add 1/4 vanilla bean or 1/2 teaspoon of vanilla extract, 1/2 cup of raw agave nectar and 2 tablespoons of raw organic coconut oil.

Step 4: The Finished Dessert

Once you have completed the first three steps, you can combine them in many different ways to suit your style and tastes. It is all about the good vibes that you have when you to create amazing desserts. Enjoy!
