2 cups of coconut cream
1/2 cup of sweetened condensed coconut milk
¼ cup Sunfood Sweet Nibs crushed, extra for topping
2 tbsp of instant coffee granules
1/4 cup of maple syrup
¼ cup Sunfood Cacao Powder
¼ cup melted coconut oil
1. Blend cream, condensed coconut milk, crushed nibs, and coffee until you get a smooth and creamy mixture.
2. Pour into a loaf pan or airtight container. Cover with a lid or plastic wrap and freeze for 4-6 hours.
3. When ready to serve, remove from freezer. In the meantime, mix maple syrup, cacao powder, and melted coconut oil until chocolate syrup consistency is reached. For a thicker sauce add more cacao powder and for a thinner one add more coconut oil.
4. Scoop out ice cream, top with nibs and chocolate sauce, and enjoy!
