Sweet Peas, Mint & Moringa Soup

This irresistible soup is light, refreshing, and a perfect spring meal.  With a hint of mint and the addition of the superfood moringa, this nutritious vegan soup will surely become a family favorite.  Moringa is a powerful antioxidant, which contains various vitamins, minerals, and protein. Moringa is also an anti-inflammatory food and boosts the immune system. It’s a shining star of this luxurious soup and definitely proves its title as a superfood.

I love this dish because it is satisfying, yet so delicate.  It’s also full of plant-based protein and is budget-friendly and quick to make.

Sweet Peas, Mint & Moringa Soup

Serves: 2-3 Cooking Time: 25 minutes


  • 2 Tbsp olive oil
  • 2 Tbsp fresh mint, minced
  • 2 large shallots, diced
  • 2-3 cloves of garlic
  • 1 ¾ cup fresh or frozen peas
  • 1 ½ cups vegetable broth
  • 1 ½ tsp Sunfood Moringa Powder



Heat the olive oil over low heat in a medium pot.


Finely shop the mint, shallots, and garlic cloves.


Add these ingredients to the pot and cook over low heat until shallots are translucent, about 5 minutes.


Add the peas and broth and bring to a simmer. Stir occasionally and allow soup to simmer for about 15 minutes.


Add the Moringa Powder and cook for another 1-2 minutes.


Pour soup into a high-power blender or use an immersion blender and blend until smooth and season with salt and pepper to taste.


Serve with a drizzle of olive oil on top.
