Vegan Peanut Butter Donuts with Chocolate Glaze

Dec 27th 2021

Chocolate and peanut butter: What more can you ask for? Valeria from Nuts About Greens ’s Vegan Peanut Butter Donuts with Chocolate Glaze are fluffy, plant-based, and perfect for an indulgent breakfast or a sweet dessert. They’re loaded with superfoods like  cacao and Jungle Peanuts for that extra crunch and nutritional punch. The chef herself says, “It’s like eating a peanut butter cup in donut form.” And we couldn’t agree more. Here’s how to make it.

INGREDIENTS

DONUTS:

2 cups all-purpose flour

1/2 cup pure organic cane sugar

2 tsp baking powder

1/2 tsp baking soda

1/4 tsp sea salt

1/2 tsp ground cinnamon

1 1/3 cups unsweetened almond milk, room temperature

1/4 cup coconut oil, melted

1 tsp vanilla extract

1/2 cup natural, drippy peanut butter

Optional: 1 tbsp  Sunfood Superfood Smoothie Mix, Peanut Butter (for that extra nutrition!)

GLAZE:

1 cup powdered sugar

3 Tbsp  Sunfood Cacao Powder

2 Tbsp unsweetened almond milk

1/2 tsp vanilla extract

TOPPING:

Sunfood Jungle Peanuts, roughly chopped

METHOD

  1. Preheat oven to 400 degrees F. Grease donut pans very well.
  2. In a large bowl, add the flour, sugar, baking powder, baking soda, salt, and cinnamon. Whisk until combined.
  3. In a medium bowl, add the almond milk (make sure it is room temperature or slightly warm so it doesn’t harden the coconut oil), melted coconut oil, vanilla, and peanut butter. Whisk until well combined.
  4. Add the wet to the dry. Mix with a spatula until combined. Don’t over mix.
  5. Spoon the donut batter into a piping bag, or a large plastic bag. Cut a corner off to create a little hole. Pipe the batter into the pan filling 3/4 of the way full. Bake for 13-15 minutes or until a toothpick comes out clean and donuts are lightly golden.
  6. Let the donuts cool in the pan for 5 minutes and then carefully remove and place on a wire rack to cool completely.
  7. To make the glaze, whisk all the glaze ingredients together in a shallow bowl until smooth. It may seem like it’s not coming together, but keep mixing and it will become smooth. The mixture should be smooth and silky, but not too thin or else it will just drip completely off your donuts. (If yours is very thin, simply add a bit more powdered sugar.)
  8. Once the donuts are cooled, dip them in the glaze. Place back onto the cooling rack with a cookie sheet underneath to catch the drippings. Sprinkle peanuts on top. Let it sit for 20-30 minutes for the glaze to set. Enjoy!
  9. Store leftovers in an airtight container on the counter. However, best when eaten fresh!
